Recipe - Minced Beef with Potatoes

Potato is one of my dad's favourite vegetable. Crystal loves it too...

Potato has got the sweetness on it own so I did not put any seasoning or salt in cooking it. It will taste nice when eat together with the minced beef. Here is the recipe:

Ingredients
  • 500 gm minced beef
  • 5 large potatoes (peeled and diced)
  • 2 tablespoons cooking oil
  • 1 big red onion
  • seasoning - 1 teaspoon black soy sauce
  • seasoning - 1 teaspoon all natural bragg liquid aminos (or 1 teaspoon light soy sauce)
  • seasoning - a pinch of salt
  • 2 tablespoons water

Method
  • Preheat the oven at 200C.
  • Heat the cooking oil in a wok, cook the potatoes for 2 minutes; take out and spread out on the oven pan, bake for 10 minutes till thorough cooked.
  • Reheat the wok. Cook the minced beef for 1 minutes and put in the onion.
  • Put in all the seasonings and water. Keep stirring until the beef is thoroughly cooked.
  • Dish out and mix together with the baked potatoes. Serve.

Steamed White Stuffed Taufu or Tofu

Another method of cooking white stuffed taufu/tofu is to steam it. The white taufu/tofu is more delicate than the fried one so it has to be handled with care during the stuffing and cooking process.

The taufu/tofu were stuffed with seasoned minced pork and corn starch dissolved in water was poured onto the taufu/tofu half way through the steaming.

This dish was prepared by my mum to serve her in laws who came to visit from Lahad Datu on Saturday.

Meals on Dragon Boat Festival

We had a simple meals prepared just for the Duan Wu or Dragon Boat Festival on 28th May, also the 5th day in the 5th month of the Chinese lunar calendar.  The dishes were prepared by my brother's maid under the supervision of my mum.  I have had only a zongzi for lunch so I was pretty hungry and all ready for the dinner. 
Fish with sweet and sour sauce but it was a bit overcooked on the black part.

Bitter gourd with eggs.  Good for lowering blood sugar and with cooling properties.  I love bitter gourd, the bitter the better.
Mixed vegetable (green pepper, button mushroom, brocolli, and baby corns).  My mum forgot to sprinkle the cashew nuts on top to add flavour to this dish.  We had the cashew nut as dessert instead.
Fried chopped garlic in soy suace for dipping of boiled chicken.
