This piece of chocolate cake is rich and yummy

This piece of carrot cake look OK but it's too dry for our liking

Castella Cake or the Japanese Cotton Sponge Cake

This is a hard to find fats free sponge cake. My definition of fats free in this context means no oil, butter and margarine added to the recipe. The recipe that I followed in making the Castella cake or famously known as Japanese cotton sponge cake is here. It is worth all the effort to make this sponge cake.
