Choux pastry, Cream puffs and enclairs

I did some baking over the Raya holidays. Cream puffs and enclairs were among some of them. I did not realise that my family love cream puff too, even without any filling on them. The puffs were all gone giving me no time to make any fillings to fill them up, hence you could only see the puffs without any cream on them. :D

This was my second attempt to make cream puffs. The first time was a disaster, it turned out to be more like biscuits than puff.

This time I got it right with this recipe. To my surprise it is fairly easy to make. You can find the recipe and more photos here.

Chillie Hot Kimchi

The popular Korean side dish, Kimchi, is one of my favourite, my mum love it too. It is very appetizing and I can eat kimchi and rice just like that.

There are many varieties of kimchi. It can be categorised into the ingredient used, the region, and seasons, however, the most common types sold in my area here are the baechu and Kakkdugi, both give you a hot chillie sensation.

The Baechu is made with Chinese Cabbage or wong nga pak while the Kakkdugi is made with cubed radish.

The nutrition facts on kimchi contains vitamin A, vitamin B1, B2, calcium, iron. It is also named as the top five "world's healthiest food" in the magazine 'Health'.

Japanese Cotton Sponge Cake

I just finished baking a sponge cake using a sponge cake mix when my SIL, Catherine, came over to my house. After tasted the freshly baked sponge cake, we both find it to be a bit dry. I told her that I was desperately looking for a recipe that would give me the kind of sponge cake which is moist, spongy and fluffy. The one that we usually buy from the shop. "That is Japanese cotton sponge cake" she said. And I quickly checked the recipe from the internet and tried it out. The texture turned out to be very well. Check out the recipe here.

Marble egg sponge cake

This weekend, my daughters requested me to bake cake again. They just love baking cakes.

I tried the Consfood sponge cake mix this time. I made it into a marble sponge cake by adding a drop of purple colouring in the batter.

This cake is very easy to make. You can find the recipe here.
